KOK&KUNST @GTB LAB
Cooking and design have a lot in common.
And their approaches to circularity are no different.
GTB Lab and KOK&KUNST are joining forces to bring the two worlds together. Resilient cooking and resilient design (through the cooking event) marked the informal opening of the second phase of GTB Lab - the circular, locally produced GTB Lab multipurpose house structure.
Both circular cooking and construction rely on local resources and their ability to be used for multiple purposes and functions. Whether that means using a wild flower for a fermentation process, edible leaves as a plate, bamboo as a glass, tree as a column, a house as an office.
This weekend at GTB Lab we explored the connection between the two on the first site, very different fields of interest but essentially two key industries (food and construction) that impact climate change through waste streams, energy consumption and CO2 production. It is fascinating how these two different fields use the same principles of circularity by strengthening the multi-layered capacity of regenerative food / construction systems for their multiple applications.
Many thanks to Josephine Kaeppelin for creating the KOK&KUNST concept and to Marente van der Valk (chef and culinary artist) and Mark Franck (expert in sustainable edible greenery) for opening up a world of fascinating combinations of flavours and endless possibilities offered by local ingredients. A big thank you to the whole KOK&KUNST team for transforming the GTB Lab's (locally produced) demonstration circular house site into a vibrant 'restaurant' space for 60 visitors.
I look forward to exploring new connections and relationships that highlight the path to new value systems that will unlock a green & circular future.
